Single Serve Healthy Apple Crisp
Who else is living for the Fall recipes?! I might turn into a pumpkin over here or if I bring home another Fall candle John’s bags may be packed lol … JK, but I LOVE FALL and I love making all the seasonal recipes! This one is perfect for you if you have sweet tooth and want a lightened up version of an apple crisp! It would be perfect topped with FAGE greek yogurt for extra protein or I did Enlightened vanilla bean ice cream! The warm mixed with the cold and the CRUNCH, you will not be able to resist! INGREDIENTS:
1. 3 tablespoons coconut oil
2. 1/4 cup quick oats
3. 2 tablespoons chopped pecans
4. 2 1/2 tablespoons whole wheat flour
5. 1/2 teaspoon cinnamon
6. 1/8 teaspoon salt
7. 2-3 apples (about 2 cups chopped)
8. 1 TBS Maple syrup for drizzling
INSTRUCTIONS:
1. Melt the coconut oil in the microwave. Stir in the oats, pecans, 2 tablespoons of the whole wheat flour, cinnamon, and the salt. Mix until well combined
2. Layer the oat mixture in the bottom of the dish then top with about 1 cup of the chopped apples and heap the remaining oat mixture over the top. Microwave for 3 minutes and 30 second
3. Top with ice cream and enjoy! I used @eatenlightened
