MK's Fav Quinoa Bowl
I’m not sure about you ladies but from the Holidays, to New Year, to Bachelor Monday’s it seems like I’m at party after party! Sometimes this can be overwhelming because there’s always so much food and lets be honest it’s not always the healthiest!

Something I’ve learned over the years is bringing my own dish is an easy way to make something new and be healthy while I’m at parties!

This recipe literally is so easy for a crowd, takes 20 minutes, and is only 5-6 ingredients depending if you add protein!

INGREDIENTS:

  • 1 can chickpeas

  • 1 cup quinoa

  • 1 cucumber

  • 20 cherry tomatoes

  • reduced fat feta - I get mine at Trader Joe’s

  • Salt, pepper, red pepper, cayenne pepper

INSTRUCTIONS:

  • Make quinoa as instructed I added 1 cup quinoa 2 cups water and made on the stove top

  • Cut ingredients while quinoa is cooking

  • Combine all ingredients in a bowl and season as you please .. it can get spicy so season to your liking

  • Top with feta

  • Serve with Sabra chips, eat as a salad or throw chicken or shrimp on top for some protein

I know this recipe is SUPER simple, but honestly I bring it to so many parties and even have it for lunch on days I am on the go! Also, its great to throw over spinach or mixed greens for the perfect salad!
