Salmon Protein Bowl

Lately I have been on a salmon kick … honestly I want it with EVERYTHING! Not mad about it though because it’s a super healthy fat, loaded with protein, and the perfect topper for a salad, rice, veggies, you name it! Today I’m sharing a protein-packed bowl that’s ready in about 15-20 minutes!

Here’s the deets!

INGREDIENTS

  • salmon - I get mine at Trader Joe’s - they have the skin on them and are about 4-6oz

  • salt/pepper/paprika

  • feta

  • olive oil or olive oil spray

  • green onions

  • brown rice - I use TJS microwaveable - takes 3 mins

  • frozen broccoli

INSTRUCTIONS:

  • pre heat the oven to 450

  • pat the salmon dry and spray with olive oil spray, season with salt, pepper, paprika

  • add parchment paper to a pan and spray with olive oil then place salmon on the pan and bake for 10-15 minutes

  • while salmon is cooking add broccoli to a sauce pan with olive oil spray, salt, pepper and cook until done

  • cook brown rice in the microwave or if you have your own make it in a pan

  • add to a bowl and top with green onions and feta
