MK'S FAV SWEET POTATOES

If you know me, you know I’m SWEET POTATO OBSESSED!!! If I’m not at Whole Foods hot bar I’m definitely googling “where can I find sweet potatoes” in any area I’m in! When I moved to Chicago I started scoping out the Chicago healthy restaurant scene and came across Little Beet Table, a gluten-free, dairy-free must eat at restaurant!

First thing I eye on their menu was ….. well you guessed it SWEET POTATOES! I got so obsessed with the way they made them that I had to master them myself! Keep reading to learn how to make the PERFECT, SWEETEST, SALTIEST, can’t stop eating them gotta have them SWEET POTATOES!

INGREDIENTS:

  • 4 sweet potatoes

  • Red pepper flakes

  • Sea salt

  • Olive oil or olive oil spray

DIRECTIONS:

  • Pre-heat the oven to 450 degrees

  • Spray whole sweet potatoes with olive oil spray

  • Make a slight cut on the top of the sweet potatoes horizontally and vertically and bake the sweet potatoes for 30 mins at 450 degrees

  • After 30 minutes take the sweet potatoes out and completely cut in half then season with salt, pepper, red pepper flakes, and spray with olive oil spray

  • Bake for another 30-40 minutes until they are cooked and caramelized

  • Let cool and ENJOY!!!
